Here is what you need:
1 box Yellow (or White) cake mix plus all ingredients to make the cake
12.8 oz jar of Hot Fudge
1/4 cup plus 3-4 TBSP of Creme De Menthe
1 8oz tub of Cool Whip (thawed)
Prepare the cake according to the directions on the box substituting 1/4 cup creme de menthe for 1/4 cup of the water (the recipe on my box called for 1 cup of water so I used 3/4 cup water and 1/4 cup creme de menthe).
Mix all the ingredients together (I used a hand mixer).
Pour prepared cake mix into a 9×13 pan that has been greased on the bottom.
Bake according to the directions on the box until a toothpick (or paring knife in my case) inserted into cake comes out clean.
Let the cake cool completely and then top with the hot fudge (you don’t need to heat it up before putting it on the cake). Be careful not to push to hard because the top of the cake will start to come up with the fudge.
Add 3-4 tablespoons of creme de menthe to the thawed cool whip.
Stir until well incorporated.
Spread Cool Whip mixture on top of the hot fudge layer on the cake.
Store cake covered in the fridge until ready to enjoy.
This cake would be fun for St Patrick’s Day, Christmas (with cherries to top it off) or any day of the week. So easy but it tastes amazing!
